Cookies for the soccer team

My little sister is a sophomore in high school (yikes I’m getting old!) and she plays soccer.  I try to make it to as many of her games as I possibly can.  The last time she played near my house I decided to make cookies for her entire soccer team.  It took some time but it was well worth it to see the smile on her face.  🙂

I have a few summery recipes that I need to get busy putting on here since the first day of fall is today!  Yikes! 

My friend recently had a Hurricane at Hard Rock Cafe and she raved about it.  She said we had to make them for our next party.  First attempt was kind of blah but for my mom’s b irthday party, I mastered it!  I made a few changes to the recipe that I found online.  There are several different versions but this is what I ended up with that I found to be intoxicating…literally.  These puppies are no joke – they taste so good that you forget that there is quite a bit of alcohol in each one.  Drink with care!!


Hurricanes – my version!


(I double everything but the alcohol when making these for a tall glass)

1/4 full of ice

1 oz light rum

1 oz dark rum

2 oz orange juice

2 oz other fruit juice of choice – I used mango V8 Splash and it was AMAZING



Put all ingredients except the grenadine in a cocktail shaker.  Pour mixture into glass and then drizzle just a bit of grenadine in until it makes a pretty swirly drink.  Stir it up and drink it up! You can use a cherry and orange slice for garnish if you choose.

Mrs. Pig Rating:  This is absolutely delish!  I will make these continually for parties and this is an awesome summer drink. 

Mrs. Pig’s family rating:  My mom and stepdad both really enjoyed these.  My stepdad said we need to definitely take the recipe with us to Florida in January – this would be a perfect sitting around the pool drink – I agree!

Well…a little late happy birthday to myself, but better late than never right? My 28th birthday was last Tuesday and it honestly was one of the best birthdays that I have had. I was able to spend plenty of time with my family and close friends and that made it very special. But let’s be honest, I love food so the food always makes it good too!

We went to my parents house for a birthday dinner and my mom made me my favorite cake that she makes me every year – banana cake! Sheridan decorated it when we arrived at mom’s house and it was made and decorated with a lot of love. 🙂 I adore the old candies that go on cakes so mom bought me some of those. YUM


Then on my actual birthday, unfortunately I was at work but my good friend Lindsay had our favorite bakery (Piece of Cake) make me the most awesome cake – I was in awe and didn’t even want to cut it!!! I’m kind of a purse freak and I love my Louis Vuitton so she had this made for me:


Isn’t that adorable? Look how thick the icing was…I swear this thing weighed 10 pounds.


All in all, an awesome birthday with awesome cakes! 🙂

Operation Baking GALS Roundup From Round 10!

I am finally getting around to doing a blog roundup from round 10 of Operation Baking GALS in which I was a team leader.  I ended up with I think 20 people who sent baked goods to my brother and his fellow troops!  I was beyond thankful and so excited to be a part of this group.  I plan on trying to do this every month now – maybe not team leader every month, but at least baking every month.

Round 11 is NOW open so if anyone would like to join a team and bake for our troops who are serving overseas, it’s very easy.  Bake a box of baked goods or any kind of goodies and ship it.  Viola!  You have put a smile on a soldier’s face for the day.  🙂  If you would like to join a team go here ——> Operation Baking GALS and sign up – what are you waiting for?! 

As I said, I had so many people join my team and it was awesome!  My brother was so excited to receive all of the baked goods.  He said that it was like Christmas which put a big smile on my face. 🙂 He said he took some boxes to their commons area and it was like “birds on a full feeder”.  HA  Knowing that I helped give them a little  piece of home makes me feel good.  They do so much for us so sending a box of cookies is the VERY least I can do every month.  Thank you to EVERYONE who joined my team!

Operation Baking GALS: My Goodies

This past weekend I spent Saturday and Sunday baking for my Operation Baking GALS group.  Did I mention that I ended up with over TWENTY people in my group??  I was ecstatic!  I could not have asked for a better response to my incessant begging asking people politely to join my group!  I am already looking forward to doing it again sometime soon.

I debated back and forth on what all to bake and well, I couldn’t make a decision so I ended up sending two boxes.  I made 4 different things.  Actually 5…but not sure one of them will make it.  I ended up making snickerdoodles, chocolate chip cookie bars, apple spice cookie bars, and magic in the middle cookies.  In addition to that, I made half a batch of sugar cookies because my brother requested those…not sure they will make it there due to the icing but if not, well, he can toss them.  🙂

Baked goods for Luke

Like I said, I ended up with way too much for one box so I ended up sending two.  But hey, he’s my brother, I can spoil him a bit right??

I ended up using 4 of the large Ziplock containers and 4 small Gladware containers.  I was able to stack 2 Ziplocks on top of one another and 2 Gladwares on top of one another in each box with room to spare to add in some other small goodies.  I used the method of putting apple peels between the paper towel layers between each row of cookies.  We shall see if it works!

I’d like to give a HUGE thank you to everyone who participated (and is still participating….still 2 days until the shipping deadline!) in my group this month.  It meant the world to me and I can’t wait for Luke and his fellow troops to receive all of the goodies!

Once everyone has shipped, I will do a roundup on here telling what everyone sent and hopefully showing some pictures of some of the things that were sent (hint hint to those who baked for me…  😉

I’m Back!

I haven’t been able to update much lately – it seems like I’ve been slammed with things going on!  We had the holidays, then Sheridan’s birthday weekend, then Tommy and I went to Puerto Rico then literally less than 12 hours after returning from Puerto Rico my good friend Lindsay and I made a road trip to Washington DC for the inauguration! Whew!  I’m finally starting to recover from everything.  I have a few actual cooking updates to do at some point.  I am hoping to get to them this week – it’s (supposedly) about to drop a major winter storm on our area so I’m praying for some snow days from work – we’ll see how that goes though!  Anyway, here are some visuals for you of my past whirlwind month!

Tommy and I at an awesome Mexican restaurant in Condado (San Juan), Puerto Rico.  Amazing trip!  That is the beach at our resort – well the rocky side of it.  Gorgeous!  Average temperature of about 85 every day.  Then came…

…..temps were not so warm here!  Lindsay and I standing in the WWII Memorial – that is where we stood for the inauguration ceremonies.  We were two of millions there to watch.  The whole experience was AMAZING!!  We went sightseeing the next day – notice how bundled up I am and I was still freezing!

Today is Will’s 5th birthday – that is a big one to a little boy!!!  Being able to say he is 5 is huge!  🙂  I just talked to him on the phone and he thought he didn’t turn 5 until his actual party which is on Sunday so he was quite excited to learn that he can actually say he is 5 today.  HA!

A Weekend of Halloween Fun!

This past weekend was a blur for us we had so many things going on.  I won’t bore you (or make you tired) by listing out all of the details.  Let’s just say that we crammed about a month’s worth of activities into one weekend.  I guess that is what happens as kids get older and get invited to parties and have all sorts of activities at school  : )

Our fun activity Friday night was going to the pumpkin patch to pick out our pumpkins.  We always each pick one to carve and one to paint.  We paint smaller ones to sit around the house – Sheridan loves doing this!  I get out all of my acrylic paints and let the kids just get creative and do whatever they want.  We have a blast doing this!  Hard at work:

Saturday night (after the Fall Festival at the kids school…after our nephew’s soccer game an hour away…after the Halloween party the kids went to at the country club…etc. etc…) Sheridan and I baked sugar cookies.  This is her favorite cookie to make – she loves making the icing different colors, using our cookie cutters, and using all of the sprinkles.  We do this every holiday and I just let her make a mess and don’t really care about it for one night.  Anyone who knows me knows that is a hard thing for me to do.  LOL  I let Sheridan decorate all of the cookies so here are her masterpieces…

Sunday morning the four of us along with my great friend Lindsay carved jack-o-lanterns at our house.  It was a little chilly so we did them in the garage this year instead of outside.  This normally turns out Tommy and I doing most of the carving.  This year was no different.  : )  Lindsay brought a book of Disney Princess patterns and Sheridan wanted to do a rose and Lindsay did Arial The Little Mermaid.  Tommy, Will, and I chose more traditional patterns.  : )  Our handywork:

Lots more stuff going on this coming weekend – Friday I have my work Halloween party followed by seeing the kids trick or treat followed by a Halloween party that night and another Halloween party on Saturday night.  Whew!  Holidays are nuts!  But I secretly love it.  : ) I’ll post costumes next week!

My First “Dinner Party”

I use the term “dinner party” loosely because really it was me and two of my awesome co-workers who also happen to be very good friends of mine.  I decided I wanted to have them over for dinner so we turned it into a fun event – we all dressed up and made it a true “girls night” and had waaaaaay too much to drink.  And by that I mean that I had a bottle and a half of wine.  On a Thursday night.  I felt miserable on Friday.  Stupid, stupid.  HOwever, we had an absolute blast!!!  We are already planning our next one – Asian inspired food with a prom night theme…HA!

Here was my menu:

Oh yeah, did I mention that I wore my wedding dress?  Yeah, I drink wine in it often so I decided it would be a riot to answer the door in it with an apron on.  My friends loved it!  HA!  That’s right.  I’m insane.  You know you love me.  : )

A hurricane and cupcakes

Sunday, the kids were with us and apparently, the hurricane Ike decided to pay southern Indiana a little visit.  I never in my life would have thought that I would see what a hurricane could do while living here!  We have everything else here – tornadoes, earthquakes, floods, why not a hurricane right?!  The weather Sunday was bizarre – it was EXTREMELY windy but not really rainy or stormy.  We had gusts up to 70mph and there was damage everywhere.  There were about 80,000 people without power.  Luckily, we were not in that group.  Our power flashed off and on all day but was only out for about 5 minutes at it’s longest point.  The kids kept wanting to go outside and play but no way in hell was I going to let them out when I kept seeing trees fall, limbs fly by, and trash cans rolling down the street.  Sheridan decided to go through all of the many sprinkles that I have in the cabinet.  She asked if we could bake something since she was bored so I thought about what I had here and decided cupcakes were a possibility.  I went to my good friend Clara’s cuppycake blog for inspiration and I KNEW I would find something easy that we could whip up.  Sheridan just basically wanted to be able to put icing on them and use all the sprinkes in the cabinet so I went with a basic vanilla.  She managed to make every cupcake different I think! I used the following recipe from Clara’s blog: (disregard the lighting in this picture.  It was even worse than normal that day due to the storm outside)


For vanilla cupcakes |
Makes ~18 cupcakes
2 cups all-purpose flour
1-1/2 cups sugar (can use 1-1/4 cup for a less sweeter taste)
2-1/2 teaspoons baking powder
1 teaspoon salt
1/2 cup shortening (very soft but not melted, Crisco is best)
3/4 cup half-and-half cream (or milk)
1 tablespoon vanilla (or use 1-1/2 teaspoons almond extract)
2 large egg

For vanilla buttercream |
Frosts ~12 cupcakes
1/2 cup (1 stick) unsalted butter, softened
3-4 cups confectioners’ sugar
1/4 cup milk
1 teaspoons vanilla extract


To make cupcakes—
Set oven to 350 degrees F.

In a large bowl, mix together the flour with sugar, baking powder and salt until combined.

Add in the shortening cream or milk, vanilla and eggs; beat on medium speed of an electric mixer scraping the bowl constantly until just blended (the batter will be thick, if desired you may add in a few more tablespoons cream or milk).

Pour into paper-lined regular size muffin tins filling under just three-quarters full. Bake for 20-22 minutes or until the cupcakes test done (do not overbake as they will be dry).

Cool completely before frosting.

To make vanilla buttercream—
Place the butter in a large mixing bowl. Add 4 cups of the sugar and then the milk and vanilla. On the medium speed of an electric mixer, beat until smooth and creamy, about 3-5 minutes.

Gradually add the remaining sugar, 1 cup at a time, beating well after each addition (about 2 minutes), until the icing is thick enough to be of good spreading consistency. You may not need to add all of the sugar. If desired, add a few drops of food coloring and mix thoroughly. (Use and store the icing at room temperature because icing will set if chilled.) Icing can be stored in an airtight container for up to 3 days.

Mrs. Pig Rating:   Yummy easy vanilla recipe!  I will definitely save this one and use again.

Little Pig Rating:  Both little pigs really liked these!  My littlest pig is in the stage where he only eats the icing off of cakes though, but he licked it dry so it must have been good.  HA!
