I have a few summery recipes that I need to get busy putting on here since the first day of fall is today!  Yikes!

My friend recently had a Hurricane at Hard Rock Cafe and she raved about it.  She said we had to make them for our next party.  First attempt was kind of blah but for my mom’s b irthday party, I mastered it!  I made a few changes to the recipe that I found online.  There are several different versions but this is what I ended up with that I found to be intoxicating…literally.  These puppies are no joke – they taste so good that you forget that there is quite a bit of alcohol in each one.  Drink with care!!

Hurricanes – my version!

(I double everything but the alcohol when making these for a tall glass)

1/4 full of ice

1 oz light rum

1 oz dark rum

2 oz orange juice

2 oz other fruit juice of choice – I used mango V8 Splash and it was AMAZING

Put all ingredients except the grenadine in a cocktail shaker.  Pour mixture into glass and then drizzle just a bit of grenadine in until it makes a pretty swirly drink.  Stir it up and drink it up! You can use a cherry and orange slice for garnish if you choose.

Mrs. Pig Rating:  This is absolutely delish!  I will make these continually for parties and this is an awesome summer drink.

Mrs. Pig’s family rating:  My mom and stepdad both really enjoyed these.  My stepdad said we need to definitely take the recipe with us to Florida in January – this would be a perfect sitting around the pool drink – I agree!

Cherry Mojitos

Another fabulous Katie recipe!  I never get tired of looking at her blog – always something new that I see that I need to put on my list!  I am totally into making fabulous summer drinks to sip on while sitting out on the patio.  Summer evenings are my absolute favorite!  This recipe sounded yummy and I couldn’t wait to make it!  I had never pitted cherries before and I, uh, didn’t have a cherry pitter (is that what you call it?!) so I just kind of had to improvise but it turned out okay  🙂  A new toy to invest in maybe?!

Recipe from Good Things Catered:

1/4 c. sugar
1 1/4 c. fresh lime juice (about 9 limes)
1 lb dark cherries, such as Bing or Burlat, pitted
2 1/4 c. best-quality black cherry or plain vodka (I used Smirnoff black cherry vodka)
1 (750 ml) bottle sparkling water

(I halved this as it was only my husband and I and even then that was way too much!  Definitely a party recipe!)

-Bring sugar and 1/4 c. water to a boil in a small saucepan, stirring until sugar has dissolved.
-Remove from heat and let cool completely.
-Syrup can be refrigerated in an airtight container up to 1 month.
-Halve 2/3 of the cherries and add all cherries to large drink container.
-Stir in vodka, lime, and syrup.
-Refrigerate at least 1 hour (up to overnight).
-Fill 12 glasses with ice.
-Spoon 1/2 cup cherry-vodka mixture into each glass.
-Top with sparkling water; serve immediately.

Pig Rating:  I figured the Pig wouldn’t like this one so much.  He is more of a beer guy if he drinks something.  He said it tasted too much like cough syrup?!  Um.  NO.  Perhaps he has bad memories of any cherry flavor from childhood?!

Mrs. Pig Rating:  These were YUMMY.  Too yummy in fact.  I could drink these and not realize that the alcohol is in them.  It will get ya’!  🙂  I will definitely make these again.  I highly recommend for a relaxing summer evening with friends!

Sauvignon Fruit Splash

It wouldn’t be ME actually coming back to the blogging world if I didn’t have a wine related post right?  With summer being here, I’m going to start making all sorts of yummy new fruity alcoholic drinks for dinners outside.  I saw this recipe for Sauvignon Fruit Splash on one of my favorite blogs, Good Things Catered last year and just never got around to making it.  I decided this weekend was the time!  I love Sauvignon Blanc – one of my fave wines so this sounded right up my alley.

From Good Things Catered:

1 large bottle of a favorite, fruity Sauvignon Blanc
1 large bunch mint
1 splash (maybe 1/8 c.?) all natural grapefruit juice
1/2 c. simple syrup (I made my own)
1/2 c. fresh raspberries
1 bottle sparkling water

-Rip mint leaves in half and lightly muddle into bottom of large pitcher
-Add a large handful of ice and pour in wine.
-Add splash grapefruit juice and simple syrup and stir to combine thoroughly.
-Add raspberries and refrigerate for at least an hour.
-Remove from fridge, add more ice, top with sparkling water and serve.

(Doesn’t it look fun in my palm tree wine glass??  I have a stemware addiction….)

Pig Rating:  The Pig isn’t huge on wine but he liked this one.  🙂  He definitely had his share of the pitcher!

Mrs. Pig Rating:  This was SO yummy.  I will definitely be making it again.  My mom will love it as well!  I will probably add less mint next time and more raspberries but I think that is a personal preference.
