We get on the most random conversation topics at my work, I swear.  We are currently working on something that has need for Hostess and Little Debbie cakes (I work in advertising) so we have about 20 boxes of this stuff laying around the office.  We started talking about these things today and someone brought up Chocodiles.  I was like, what in the world are Chocodiles?!  Apparently these are chocolate covered Twinkies and they were way more popular about 20-25 years ago than they are now.  They sound pretty gross to me, but I had to look them up. 

 They look like poo in my opinion.  However, one of my co-workers and now my husband are wanting these things.  However, upon studying further on the website, I learned that they only sell these on the west coast.  So… weekend I happen to be seeing some of my friends who are from the west coast.  MAYBE one of them would buy me a box and bring them and I can pay them back?!?  : )  I would have a lot of happy people around me…

I have seen other blogs get this “E For Excellent” award before and thought it was very cool.  So imagine how cool it was when I saw that someone had given me this award?!  Jen at The Look 4 Less awarded me with this recently and it made my day!  Jen is such a sweetheart and her blog is AWESOME!  If you haven’t seen it before – shame on you!  Make it a favorite!  : )  Thank you Jen!!!!

 In the spirit of this award, I am now supposed to list 5 of my favorite blogs in no particular order and award them an “E” for “Excellent”.  I have SOO many blogs that I just love, so I will try to narrow it down to 5, but I could easily list about 20…  : )

1.  BB’s Fantabulous Life:  Amanda’s blog is so fun!  This is a blog not only about her trials and tribulations with cooking but also her life which definitely has some funny moments.  She is one of the funniest people that I know!

2.  Born to Entertain:  I really like Andrea’s blog for a couple of reasons.  One, she is awesome.  HA!  Two, she is my twin.  It is so bizarre how many things that we have in common!!  Three, her food tastes are very similar to mine – she loves good food, but she also likes to watch what she eats, so I love to look at her blog for great recipes.  Especially good pasta recipes.

3.  Frantic Home Cook:  If you haven’t been to this blog – GO NOW!  I love it!  Awesome recipes, easy recipes mixed in with no so easy ones, good kid food, and most of all hilarious blog entries.  I love this one! (Mom, you will like this one!)

4.  Irish Girl who Cooks and Drinks:  Kat is such an inspiration to me – she is a personal trainer and nutritionist who owns her own gym – what an awesome career!  Her blog is full of great healthy recipes and I love to make them.  Her Fancy Fast Chicken has become a staple in our house!

5.  Jamie’s Life -LIfe is Hard:  Jamie is just funny.  Period.  She cracks me up every day and her blog is the same way.  : )

My new stove!

As some of you know, we are going to build a house in the next couple of years.  We are designing it and doing most of the work ourselves so we are still a couple of years away, however we are planning for it already. 

One of the things I knew we needed to do before we sell this house is to buy a new stove.  For some reason when Tommy bought this house, all of the appliances matched except for the stove which was almond while everything else was black.  We had no intentions of buying a new stove for awhile but we were at Lowe’s last weekend and saw one that was  a good deal, so we bought it randomly!  I was super excited!  Our old stove did not have a flat cooktop and this one does – YAY!  It is nothing super fancy but I LOVE it!

I received the phone call today that it was in and I was so excited!  Tommy left work early and when I got home it was all set up for me to fix dinner.  🙂   See below my new toy:

NFR: The Aforementioned Bunny

As I mentioned in my “random” post below, we have a bunny who has become fond of our back yard.  He is there every morning and every evening and has been for about two weeks now.  Somewhere along the way he went from, “Oh look, there is a bunny in our yard!,” to someone who I consider to be a pet and someone who I look forward to seeing every day.  : ) 

I was talking to my good friend Clara who actually has two pet bunnies, about how to care for him.  I was asking her if I could give him any particular snacks.  She sent me an awesome list of things so I promptly went outside and put some baby carrots, cherry tomatoes, and romaine lettuce in our yard.  It was funny because the first day the stuff was out there, the bunny didn’t go near it.  The next day though, not only did that bunny go near it, but there were TWO bunnies!!!  : )

 The bunnies haven’t been in the yard for the past two days now, but it’s been raining so hopefully they are hiding out somewhere.  I want them to come back!!! I love them!  : )

I had forgotten that I hadn’t yet finished the “random things about me” posts, so here is the final installment in case anyone cares to hear any more random things about me…  : )

76.  Sauvignon Blanc is currently my wine of choice
77. We currently have a bunny who loves our backyard and I have become attached to him
78. I am more comfortable in heels than flats any day
79. Some of my friends have nicknamed me the “bikini boss” because I am good at motivating (ie, driving people insane) people to workout & eat healthier
80. M&M’s are my favorite candy
81. I am much more of a salt lover than sweet lover
82. When I was little, one of my favorite things to play with was She-Ra Princess of Power
83. My best friends from roughly age 3-10 were boys. They had He-Man toys which were the equivalent of Princess of Power. It worked out well.

85. My area of the country is currently flooded. As in state of emergency flooded. Tornadoes, ice storms, now this. Geez…
86. I am currently obsessing over the beginning signs of wrinkles on my face.

88. My dream vacation is Italy – I’m dying to go to Tuscany and drink wine for 2 weeks straight.
89. I love to read – mostly chick lit. I love escaping from reality sometimes.

95. I hate when I am baking and I mix up a bunch of stuff that includes powdered sugar and the powdered sugar flies everywhere. That really annoys me.
96. My favorite cuisine is Italian. Our favorite restaurant in town is this little Italian place on the walkway called Angelo’s. It is Fierce.
97. I can’t stand to be around people who think they know everything. It is completely annoying.

Penne w/ Vodka Sauce – Cooking Light & Andrea style!

I love pasta dishes so much.  I could eat pasta every day if my waistline and booty would let me.  I would never get tired of it!  I try to limit our pasta dishes to once a week or once every two weeks but when I saw this one on Andrea’s blog, I knew that I had to make it.  I love penne with vodka sauce and I liked that she got this one from Cooking Light.  She modified it a bit, but I think it’s still not completely bad for the approaching bikini season.  : )

1/2 pound uncooked penne pasta (I used wheat pasta)
1 tablespoon olive oil
1/2 cup finely chopped onion
1 teaspoon salt, divided
1/4 teaspoon crushed red pepper
1 garlic clove, minced
1/2 cup vodka
1/4 cup fat-free, low-sodium chicken broth
1 (14.5 ounce) can diced tomatoes, undrained
1/4 cup whipping cream
3 tablespoons sliced fresh basil


– Cook pasta according to package directions, ommitting salt and fat.
– Heat oil in a saucepan over medium-high heat.
– Add onion and saute 4 minutes until tender.
– Add 1/4 teaspoon slat, pepper, and garlic; saute for 1 mintue.
– Remove from heat and add vodka; bring to a boil; reduce heat and simmer 3 minutes or until liquid reduces by 1/2.
– Stir in 1/2 teaspoon salt, broth, and tomatoes; bring to a boil.
– Reduce heat and simmer for 8 minutes.
– Use immersion blender or transfer sauce to blender and process until smooth.
– Stir in cream and cook for two more minutes, stirring constantly.
– Remove from heat.  Stir in cooked pasta, remaining 1/4 teaspoon salt and basil.
– Serve immediately.

 Pig Rating:  He really liked this one – score!!!  Thanks Andrea!!  He was already asking if there would be leftovers to eat the next day.  : )

Mrs. Pig Rating:  This was AWESOME!  This is seriously one of my favorite pasta dishes that I have made so far.  I think next time I may add some chicken to it, but this one is fantastical!

Happy St. Patrick’s Day!!!  I found out this weekend that I am 1/3 Irish (I’m a mutt basically…LOL) so that means I must celebrate even if it means not going out and getting drunk and stupid (I’ve certainly NEVER done that on St. Patty’s day….Umm……errr…..).

We had a “food day” today at my work.  Everyone brought in something – kind of a pot luck for St. Patrick’s day.  I made a cheese dip and the now famous “Erin’s sugar cookies” in the shape of shamrock’s of course.  🙂 Everyone brought so many awesome dishes to work….quite the mish mash of things.  On my plate at lunch were lasagna, barbecue chicken, cajun chicken, pickles, cheese and chips….um….LOL  Totally not my  healthiest day.  I went to the gym beforehand…does that count for something?!

Here are my festive St. Patty’s Day cookies….

And this was super funny.  One of my coworkers brought in green snake bread that she bought at our local grocery store.  LOL  : )

And finally tonight, Tommy and I finished off the day with our green beverages of choice.  : )

Dying Easter Eggs

It’s that time of year again…time to dye Easter eggs!!!  I love dying eggs.  My mom and I did it every year and I intend on doing it every year with our kids as well.  It’s such a fun time!  It’s magic as a kid to watch pure white eggs turn colors in a matter of a few minutes  🙂 

 Saturday night we had the egg dying night at our house.  A week before Easter, but again, have to do it when we have the kids.  It was so much fun!  Sheridan loves to write on the eggs with the waxy crayon before she colors hers and Will loves to get to pick out which colors “his” eggs will be.

Easter Bunny Cake!

This is pretty weird….to be having Easter celebrations before St. Patrick’s Day even occurred?!  Totally weird.  But it happened.  On Saturday we had Easter at my parent’s house.  We do not have the kids next weekend so we kind of have to do things when we can and thankfully I have parents who are extremely laid back and undertanding of this (thanks MOM!).

 Our job on Saturday (by “our” I mean, Sheridan and I since we are the “cookers and bakers” of the house…Ha!) was to bring a dessert.  Mom mentioned a bunny cake.  The story behind the bunny cake is that my mom used to make these for my high school and 4-H bake sales back in the day and we had a good time with them.  So…I bought the stuff for Sheridan and I to do one. 

This was really fun and easy to make.  : )  You just use a box of cake mix (we used white) and used 2 – 9″ circle cake pans, bake them, and cut one circle so that you have ears and a bow tie, and viola!  A bunny cake!  Then you can ice and decorate however you choose.

Isn’t it cute and festive for Easter??  The kids loved it.  : )  We used M&M’s all over it…one of Tommy’s faves!  Clara, do you love it!?  It’s a bunny! LOL
