Master Baker Challenge #1 – Cinnamon

My friend Nikki decided to start the Master Baker Challenge and I thought it looked easy enough so I thought I would finally join in the “challenge” fun. This month’s ingredient was cinnamon. I absolutely love cinnamon – I love cinnamon toast, I love apple cinnamon anything, I love cinnamon rolls, cinnamon bread, etc. You just can’t go wrong with cinnamon in my book.
I searched through several different recipes before deciding on one to make for this cinnamon challenge. I wanted something not so obvious like cinnamon rolls, etc. So, I stumbled upon this recipe called, “Double Tree Hotel’s Chocolate Chip Cookie,” on Bakespace. Okay, YUM. I love these cookies and I had some chocolate chips that I needed to use so this became the winner. You can’t go wrong with a good chocolate chip cookie recipe. I was surprised to see that it used cinnamon in it, but excited!
Now, these cookies are big. If you have eaten a Doubletree cookie, you know this. This isn’t your wimpy chocolate chip cookie. And don’t be scared of the ingredients like lemon juice, cinnamon, and oats. Trust me on this one. This is a really good cookie. A good big cookie. Did I mention that these are big?! : )
I was able to fit 5 of these on my biggest cookie sheet (15.5″ x 20″) and that was about perfect. As the recipe said, I only cooked these for about 14 minutes then checked them. I think it ended up taking about 15 minutes on most batches. You just want the edges to be golden brown and the middles to still be soft. Let them cool on the sheet for a minute or two before removing as they are so soft in the middles still that you don’t want them to break apart.

I’ll admit that I am a little scared of lemon juice in my chocolate chip cookies, but I trust you and if you say they’re good, then they must be yummy!

I’ve had a hard time finding a ch.chip cookie recipe that I really love, so since these seem really different in the ingredients, maybe they are what I am searching for. If I can ever get my pipes to thaw so that I have running water, I will give these a try! I would so much rather be baking than crawling under the house in -15 windchill!
